A classic item for use in food preparation and presentation, this bamboo ‘zaru’ is by Oita-based Chikuen.

Woven flat baskets, zaru are perhaps most synonymous with ‘zaru soba’ plates of buckwheat noodles. Here the noodles are taken from the zaru to be dipped in sauce. Zaru are also traditionally used for drying ume plums to make umeboshi pickles, or for displaying produce in shops. But the opportunities for use multiply according to the imagination of the owner, with zaru becoming handy ever-presents in Japanese kitchens. It is important just to remember to air dry them thoroughly after use, to extend the lifespan of the item. No zaru made from natural materials lasts for ever, but they can for a long while be a companion in Japanese eating. Evocative and satisfying to use.
